On Cheese
We know pasta. We consider ourselves experts at our craft and we know that choosing perfect ingredients is essential to the quality of our products. That’s why we use Wisconsin cheese in our artisan, handcrafted fresh pasta, because we know they are experts, cheese is what they do. The history of cheese in Wisconsin dates all the way back to the 19th century with European Immigrants recognizing the state for it’s fertile land, primo for dairy farming. The first commercial cheese factory was established in 1841. Today, Wisconsin produces 500 million pounds of cheese annually, and enforces rigorous standards, including the requirement for all commercial cheese operations to be supervised by a licensed cheese maker. They mean business, they are dedicated to their art, and that’s important to us at here at Alfresco.
